Collagen Beauty Bites

These gluten-free, vegan superfood cookie dough bites are insanely delicious and easy to make. I love including Agent Nateur Holi (Mane) collagen in these to add beautifying marine collagen and pearl powder to the other superfoods in the recipe like cacao nibs, flaxseed, and hempseed.
These are a perfectly indulgence for any time of day, whether a quick breakfast on the go or decadent dessert.

COLLAGEN BEAUTY BITES 

Ingredients: 

1/2 cup almond butter

1/4 cup maple syrup

1/2 teaspoon pure vanilla extract 

3/4 cup almond flour

3 tablespoons flaxseed meal

1/4 teaspoon Himalayan salt

1/4 cacao nibs 

2 tablespoons hemp seeds

2 tablespoons unsweetened shredded coconut 

Directions: 

1. In a large bowl,  stir together the almond butter, maple syrup, and vanilla until creamy. In a medium bowl, mix together the dry ingredients: flour, flaxseed meal, and salt.  

2. Add the dry ingredients to the wet and mix well to combine. Use the back of your spook to work in the cacoa nibs. Use your hands to roll the dough into 1 inch balls. 

3. In a small bowl or on a plate, mix together the hemp seeds and shredded coconut. Roll each ball in the mixture until fully coated. Refrigerate the bites for at least 30 minutes before serving. Store leftovers in the fridge for up to one week or freeze for up to 1 month.
